3. Cook on Dum

Set the pot on your stove on lowest possible heat. Let it cook undisturbed for 4 to 5 hours. Do not open the lid during this time. The steam cooks everything gently and evenly.

4. Final Touch

After 5 hours, remove the dough seal carefully. You’ll see soft, juicy lamb, a crystal-clear broth, and intact cloves of sweet garlic.

Add freshly ground black pepper. Simmer uncovered for 5–10 minutes if you prefer a slightly thicker broth.
